I would drive for miles for my biggest craving at the Beach Bar on Clark Lake in Michigan. After years of making it at home it has become a staple comfort food for my entire family.
- 1 large can tomato soup (46 oz)
- 1 small block of cream cheese
- 2 14oz cans stewed tomatoes
- 1 pint half and half or heavy cream
- Light garlic powder or 2-3 cloves grated fresh garlic
- Pepper
- 1 stick of butter
- a pinch of red pepper flakes if you like a little spice
- grated parmesan
- garlic croutons (I love the Texas toast version)
- Mix soup, butter and half and half, blend stewed tomatoes and add to soup
- Using a whisk- beat very soft cream cheese into soup, there will be small pieces of cheese in the soup
- Add a pinch of garlic powder and pepper
- Heat for at least 30 minutes- but also great on low in a crock pot for a crowd-
- I top the soup with grated parm and garlic croutons, and if I have it fresh basil.
Great for a crowd with ham and cheese sliders… mmmm

Kim, this recipe sounds delicious. Can you clarify when the butter gets added?
It is! Yes, I add the butter right in after the stewed tomatoes:) I hope you enjoy it as much as my family does. I serve it to a crowd with mini ham and cheese sandwiches- a big hit!
When it says 2 cans of stewed tomatoes. Does that mean large cans or small 14.5 oz cans? Canโt wait to make this, thanks
Smaller cans 14.5 oz ๐
How many does this recipe serve?
How many does one batch serve? Want to do this for an after-church luncheon with grilled cheese sammies.
I would estimate this would serve 4-6, you could also double the batch for a crowd.
So awesome to find a recipe. I moved away and miss it so much. Thank you!
Hi- is condensed tomato soup needed or ready to eat tomato soup?
I use Campbell’s tomato soup- on of the larger can, enjoy!
Iโm going to give this a try tonight. Moved to San Diego in 2002 but visit my parents often and we walk to the beach bar to get the tomato soup with a Ruben sandwich. I was there last month even though they were only open weekends due to Covid, but I am already craving it.
Since the canned soups are usually condensed, do you add the water or milk to the canned soup first, or just use it in the condensed form for his recipe? Thanks.
No water added- just the canned soup ๐ Sorry for the delayed response
